Rushan Cheese Workshop
Dali, Yunnan, China
This 30-minute workshop provide unique insights into the unique culinary culture of the Bai people. Rushan cheese is made from fresh milk, boiled and shaped into a wrapped thin sheet resembling a folding fan.
Rushan can be fried, grilled or rolled up on a stick as a Yunnan snack similar to an ice pop. It is sometimes served with condensed milk, rose petal-infused honey, fruit jam or chocolate syrup.
