Spinach, Peas & Mascarpone Frittata Muffin

An ideal breakfast or healthy snack, the spinach, peas and mascarpone frittata muffin is both delicious and filling.

Makes 12


12 medium eggs
100ml whole milk
40g parmesan, grated
Some ground pepper
40g spinach, roughly torn
20g peas
250g mascarpone
12 x muffin cases


1) Pre heat oven 170 degrees

2) In a large mixing bowl mix eggs, parmesan, black pepper and milk together. Transfer to a pouring jug

3) Place the muffin cases in the muffin pan

4) Divide peas and spinach evenly among the muffin cases

5) Pour the eggs mixture until ¾ full

6) Spoon a dollop of mascarpone into the middle of each mixture

7) Bake for 25 – 30 minutes until set
