Day 1: Arrival
Fast-track services get you through the airport without queuing. Your guide meets you and drives you to Zannier Phum Baitang. The rest of the day is unscheduled. Day 2: Tonlé Sap at Sunset
You'll board Ella, a wooden boat built for exploring the Tonlé Sap. This is Southeast Asia's largest freshwater lake, and it's unlike anywhere else – water levels rise and fall dramatically with the monsoon, so communities here build homes on floating rafts or 10-metre stilts. This afternoon you'll cruise through Meachrey floating village, watching how people live on the water. Cocktail in hand, you drift past fishing nets and stilt houses as the light changes. Sit inside or on the roof – either way, there's something hypnotic about watching this landscape slowly transform as the sun drops.
Day 3: Angkor Wat Before Dawn
Your guide collects you before sunrise for the drive to Angkor Archaeological Park. You'll start at Srah Srang – a water temple best seen in half-light – then move to Ta Prohm, where tree roots and stone have become one thing. You'll walk through largely alone at this hour. After breakfast, Ta Nei comes next – a temple that few visitors find. There's a real chance you'll have it to yourself. Day 4: Bangkok Arrival

Rajadamnern Boxing Stadium comes next – the world's most prestigious Muay Thai venue, where the air thrums with anticipation. Backstage, you'll see fighters in their final moments before competing, the focus almost tangible. Your ringside seat puts you directly in the energy of a live match – the crowd's noise, the speed of the fighters, the precision of every movement. Day 6: Arrival in Chiang Mai
The morning flight carries you north, away from Bangkok's intensity. As you arrive in Chiang Mai, the pace shifts – the air feels different, the city moves slower. Afternoon gives you space to find your rhythm. The Old City's temples and lantern-lit streets are there if you want them, or simply rest at your hotel and let the quieter energy of this place settle in. This unscheduled time matters. Day 7: Coffee Hilltribe – A Mountain Day
A 1.5-hour drive west takes you into the highlands, where the landscape opens into valleys and dense forest. A Karen hilltribe village sits tucked into this terrain – this is where your guide's connection runs deep. A 4WD adventure climbs higher still, rough tracks cutting through coffee forests where shade-grown plants thrive beneath canopy. You'll learn how this works from people who've been doing it for generations – the timing, the technique, the relationship between land and crop. At one point, you'll plant your own coffee tree, your hands in soil that's been worked for decades. Return to the coffee camp for lunch they've prepared from what grows here. Afternoon workshops teach you to roast beans and brew V60 – skills that'll follow you home. He'll share stories as you work – why this matters to Thai heritage, the temples he's restored, the techniques passed down through generations. You leave with a piece that's genuinely yours, not mass-produced, and a deeper understanding of what goes into the art you see in temples across Thailand.

Day 9: Koh Wae Snorkelling

Day 11: Farm-to-Table at JAMPA
Start with a guided walk through JAMPA's private organic farm in the late afternoon – the vegetables, herbs, and produce that will become your dinner. Your guide explains what grows here, why, what's in season. As evening settles in, move into the restaurant, a Michelin Green Star recipient where sustainable fine dining isn't a marketing phrase – it's how they actually operate.
