    Day 1: Arrival


    Fast-track services get you through the airport without queuing. Your guide meets you and drives you to Zannier Phum Baitang. The rest of the day is unscheduled. Rest, explore and recover from the flight. The team here understand that arrival days aren't about doing anything – they're about settling in.


    Day 2: Tonlé Sap at Sunset


    You'll board Ella, a wooden boat built for exploring the Tonlé Sap. This is Southeast Asia's largest freshwater lake, and it's unlike anywhere else – water levels rise and fall dramatically with the monsoon, so communities here build homes on floating rafts or 10-meter stilts. This afternoon you'll cruise through Meachrey floating village, watching how people live on the water. Cocktail in hand, you drift past fishing nets and stilt houses as the light changes. Sit inside or on the roof – either way, there's something hypnotic about watching this landscape slowly transform as the sun drops.


    Day 3: Angkor Wat Before Dawn


    Your guide collects you before sunrise for the drive to Angkor Archaeological Park. You'll start at Srah Srang – a water temple best seen in half-light – then move to Ta Prohm, where tree roots and stone have become one thing. You'll walk through largely alone at this hour. After breakfast, Ta Nei comes next – a temple that few visitors find. There's a real chance you'll have it to yourself. End at Ta Keo, the five-tiered pyramid known as the "mountain with bronze peaks." Early mornings at Angkor mean space, quiet, and time to actually look at things.

    Day 4: Bangkok Arrival


    Morning flight to Bangkok. After checking in, evening brings a tuk tuk ride through Chinatown. Your guide meets you at Hua Lamphong Railway Station and introduces your driver – he knows these streets. You'll stop at places locals eat, not tourist restaurants. Street vendors, grilling meat, fresh herbs, neon signs. Whether it's your first street food experience or your tenth, there's something here you won't find elsewhere. Three hours moving through the city at ground level.

    Day 5: Muay Thai Masterclass

    Afternoon pickup takes you to a local boxing camp where Thailand's national sport isn't a tourist activity – it's serious business. You'll watch fighters train, their movements precise and brutal. Then you step into the ring. A seasoned trainer corrects your stance, shows you how to throw a proper kick, explains why the ritual matters. Your body will feel it. Rajadamnern Boxing Stadium comes next – the world's most prestigious Muay Thai venue, where the air thrums with anticipation. Backstage, you'll see fighters in their final moments before competing, the focus almost tangible. Your ringside seat puts you directly in the energy of a live match – the crowd's noise, the speed of the fighters, the precision of every movement. Afterwards, meet a champion and take home an authentic pair of Muay Thai shorts.

    Day 6: Arrival in Chiang Mai


    The morning flight carries you north, away from Bangkok's intensity. As you arrive in Chiang Mai, the pace shifts – the air feels different, the city moves slower. Afternoon gives you space to find your rhythm. The Old City's temples and lantern-lit streets are there if you want them, or simply rest at your hotel and let the quieter energy of this place settle in. This unscheduled time matters. It's where travel stops feeling like a schedule and becomes something more natural.


    Day 7: Coffee Hilltribe – A Mountain Day


    A 1.5-hour drive west takes you into the highlands, where the landscape opens into valleys and dense forest. A Karen hilltribe village sits tucked into this terrain – this is where your guide's connection runs deep. A 4WD adventure climbs higher still, rough tracks cutting through coffee forests where shade-grown plants thrive beneath canopy. You'll learn how this works from people who've been doing it for generations – the timing, the technique, the relationship between land and crop. At one point, you'll plant your own coffee tree, your hands in soil that's been worked for decades. Return to the coffee camp for lunch they've prepared from what grows here. Afternoon workshops teach you to roast beans and brew V60 – skills that'll follow you home. The drive back is quiet, the kind of quiet that comes after a day that's genuinely shifted something.

    Day 8: Thai Gold Art Workshop

    Choose morning or afternoon for your workshop at Baan Thongjaya – a historical yellow house now functioning as a creative space for Mr. Luengvilai. He's a Fine Arts graduate, trained in the restoration of temples including Wat Pho. Today he's teaching you traditional Thai lacquering and gilding – the kind of craft that's considered high art here. You'll work with gold leaf and lacquer on a wooden plaque, creating something that exists because of your hands. He'll share stories as you work – why this matters to Thai heritage, the temples he's restored, the techniques passed down through generations. You leave with a piece that's genuinely yours, not mass-produced, and a deeper understanding of what goes into the art you see in temples across Thailand.

    Day 9: Koh Wae Snorkeling

By the end, you'll have created something you can replicate at home, not just a recipe, but an understanding of how Thai cooking actually works. Sit down and eat what you've made. It tastes different when you've cooked it yourself.


    Day 11: Farm-to-Table at JAMPA


    Start with a guided walk through JAMPA's private organic farm in the late afternoon – the vegetables, herbs, and produce that will become your dinner. Your guide explains what grows here, why, what's in season. As evening settles in, move into the restaurant, a Michelin Green Star recipient where sustainable fine dining isn't a marketing phrase – it's how they actually operate. Choose between a 4-course dinner or the full 7-course JAMPA Experience. Each dish tells a story about zero-waste philosophy and the provenance of ingredients.
