A deeply rooted Andean culinary tradition, Pachamanca is a communal feast prepared using heated stones buried in the earth. At Piuray lagoon, the ingredients are presented before cooking, offering insight into the significance of this ancestral method. Guests are invited to take part in burying the food, followed by a traditional Andean blessing led by a local community member and an appointed godparent.
After approximately 45 minutes, the Pachamanca is unearthed and enjoyed. An example of what the feast could include is: quinoa tabbouleh with avocado and smoked trout, followed by a generous selection of Andean potatoes and tubers, broad beans, corn, gratin Andean cheese, chicken and lamb, accompanied by bananas, pineapple, huancaína and uchucuta sauces. Dessert features aguaymanto and chocolate cookies, with herbal infusions and hot drinks served alongside the meal.
