Brazilian cuisine offers a mind-boggling diversity of flavors and styles due to the vast size of the country. Each region takes influence from its neighbors, drawing traditional ingredients and dishes from its unique cultures and customs. From the Amazon in the north to the Bahian coast and the fertile plantations of the central coast to the southern pampas, the Portuguese and African heritage can be seen in these delights, while the European influence is demonstrated wholly through the adopted 'sweet-tooth'.

This afternoon excursion takes place in the home of our local guide, a beautiful penthouse which enjoys views over Rio. Begin with a quick lesson in creating the perfect caipirinha, Brazil's national cocktail, before learning the intricacies of preparing Moqueca, a famous fish stew which is a must-try when in Brazil. Your teacher will regale stories about the history and traditions of the ingredients and foods used, before you settle down to sample the delicious meal which you have just helped to create.
