Sweetcorn & bacon fritters with sour cream & cheddar dip

Served with roasted tomatoes and a sour cream and cheddar dip these sweetcorn and bacon fritters are scrumptious.

Makes 8



30g plain flour
30g cornflour
30g self raising flour
100g bacon, chopped finely
120g sweetcorn
½ courgette, grated (about 150g)
2g salt
1 small egg, beaten


150g sour cream
100g grated cheddar

16 cherry tomatoes, halved
Spray light


1) In a mixing bowl, mix the flour together with the beaten egg, tip all the other ingredients in and mix well

2) Spray two baking trays with spray light and make sure it is evenly covered

3) Pre heat oven 180 degress fan

4) Spoon mixture onto baking tray and flatten the mixture with back of spoon. Make sure there is a gap in between fritters. Spray with spray light and place in oven for 30 minutes. Place the tomatoes in the oven at the same time for 30 minutes

5) After 15 minutes, turn the fritters over with a flat metal spatula and cook on for further 15 minutes till crispy on the edges

6) For the dip, mix cheese and sour cream together

7) Serve fritters with dip and roasted tomatoes
