Pay a visit to Puebla's Acocota market, accompanied by chef Martin Cortez as your guide as you pick out fresh ingredients and learn a little about complex Mexican dishes. Martin will act as translator if required and introduce you to his favourite vendors, teaching you about the various spices and seasonings common in Poblano cuisine.

You will then head to the kitchen of La Casona de la China Poblana where you will be greeted with pasita, a traditional local drink, getting ready to begin your step by step cookery class. Learn how to prepare a traditional mole poblano, a rich dark sauce which is served with meat and sit down to sample your creation. To top it off you may wish to try Yolixpa, a brandy based spirit which is blended with aromatic herbs to create a warming post-dinner drink.
