Tasmania has a temperate climate with 4 distinct seasons. Warm summer days from December to February and sometimes snow in the cooler months of June to September. The best time to visit Tasmania is between October and April, when the weather is at its best. By May, nights are getting cold and days are getting shorter. Winters (June-Aug), especially in the high country, can be quite harsh- though that's the best time to curl up in front of a blazing fire.

Distinct in its design, Saffire is a luxury coastal sanctuary on Tasmania’s East Coast that features only 20 suites. With the vast expanses of Tasmanian wilderness surrounding you, Saffire really has an exclusive atmosphere, heightened by uncompromising service and stunning attention to detail.

Taking inspiration from the colors of the Freycinet Peninsula, each of the 20 suites is luxuriously appointed, designed with an eclectic combination of traditional and contemporary elements, all with magnificent views of the Hazards Mountains and azure blue waters of Great Oyster Bay. Saffire’s use of timber, stone and leather connects the interiors with the surrounding environment, making the most of the natural coastal beauty and dramatic scenery.

The innovative menus at the Palate Restaurant make the most of the stunning local produce, taking advantage of whatever is fresh out of the water or the paddock. Saffire’s executive chef Iain Todd can turn his hand to anything, be it recreating a favorite dish, campfire dining or multi-course dégustation menus paired with the finest local wines.

Saffire has an extensive array of activities on offer to suit every guest, with deserted islands, wild bushland and secluded beaches to explore. Take a visit to Schouten Island, which is home to penguin rookeries and seal colonies and from May to November, this remote island is the place to spot migrating Southern Right whales.

Following a day of exploration walking the white sands of Wineglass Bay or indulging in some of Tasmania’s exquisite food and wine, visit Spa Saffire, with a wide range of bespoke treatments on offer, designed by some of the world’s leading experts.

Saffire's 20 luxuriously appointed suites have views of the Hazards Mountains, crystal blue waters and white sandy beaches. Deluxe Suites have an open plan bedroom and living area, courtyard and a private deck with outdoor seating. Luxury Suites have a larger indoor living space and the deck has an outdoor lounge. For the ultimate in space, the Private Pavilon has a vast living and bedroom area, dining room, kitchen and private courtyard with plunge pool. All suites have an LCD screen TV and Blu-ray DVD player, Geneva iPod music system, Wi-Fi, en-suite with double shower and bathtub.


Children are very welcome at Saffire and there are plenty of activities they can get involved with (although some have age and/or height restrictions). Children will enjoy the fishing, nature walks, wii games, children's games and DVD selections as well as mountain bikes, cooking classes and getting out and about on boats. The chef will happily cater for children's meals.


Saffire's Palate Restaurant prides itself on customized cuisine and although there is a menu, you can chat with the chef about what it is you really want and have it made personally for you. Menus are designed with the freshest ingredients and the setting is modern with spectacular views. The Lounge is the perfect place to relax with a drink by the fire or in the courtyard. Saffire also has a spa which is a soothing restorative sanctuary with many wonderful treatments and there is also a gym.


There are plenty of activities available at and around Saffire including wine and food tasting, guided nature walks, abseiling, rock climbing, Pelican Bay canoeing and bird watching, fishing, visiting the local oyster farm, cooking classes with the chef or simply star gazing and relaxing in a hammock.

    Today you will be walking for approximately six hours across mossy plains and alpine moors. Leaving the dramatic peak of Cradle Mountain behind you, your destination today is the stately Mt Pelion West.

  • Day 3 - Cradle Mountain Huts Walk: Pine Forest Moor Hut – Pelion Hut

    This morning descend to a lower altitude and venture through native myrtle-beech rainforest that thrives at the base of Mt Pelion. With the Forth River in site follow the banks of this gushing waterway leading to picturesque Lemonthyme Valley.

  • Day 4 - Cradle Mountain Huts Walk: Pelion Hut to Kia Ora Hut

    This morning you will ascend almost 300m to Pelion Gap a plateau stretching between Mt Pelion East and My Ossa.

  • Day 5 - Cradle Mountain Huts Walk: Kia Ora Hut to Windy Ridge Hut

    Today you will swap mountainous peaks for thundering waterfalls. From Kia Ora Hut it’s a gentle one hour walk through temperate forest to Du Cane, where a traditional hunters hut from the early 20th century still stands strong.

  • Day 6 - Cradle Mountain Huts Walk: Windy Ridge Hut – Lake St Claire

    Today’s walk is the shortest in duration but arguably the most scenic. Your destination today is Lake St Claire, a natural glacier-carved lake known as one of Australia’s deepest.
