A member of the Relais & Châteaux network, Le Phébus enjoys an idyllic spot between Rousillon and Gordes, around 30km from Avignon. The site dates back to the Knights Templar who were established in the area during the 12th and 13th centuries. Today, in a nod to its history, this 5-star hotel is housed in a charming stone farmhouse and is named to reflect the wonderful sunshine which bathes the area – Phébus being the second name of Apollo, God of the sun. 
 
Furnishings are tasteful and refined and all, but the smallest rooms have a private garden terrace. The palette of golds, dusky creams and ivory complements the terracotta flooring, while the crip white linens and spacious marble bathrooms ensure a comfortable stay. Junior and Prestige Suites come with private swimming pools, the Grand Prestige Suite includes a lounge and sleeps up to four. 
 
Families can check into one of two private villas, Villa Haute Couture, with seven suites, accommodating up to 14 people, comprising large living rooms with fireplaces, a fully equipped kitchen, terrace with heated swimming pool and a fitness room. A butler service, housekeeper and chef are available if required. Smaller groups can book Provençal Mas, comprising one suite and two bedrooms, each with a terrace overlooking the Luberon. 
 
Michelin-starred since 2001, La Table de Xavier Mathieu is the star of the show, where you can experience a creative twist on traditional Provençal recipes. Characterised by a subtle blend of the textures, tastes and colors of the area, Xavier Mathieu will take you on a gourmet journey like no other. Both vegetarians and vegans are catered for, and Xavier even offers cooking classes for those keen to learn more about gourmet dining. 
 
For bistro dining, sample Mediterranean dishes served outside by the fountain, at Le Café de la Fontaine, a delightful place to linger over a meal. The menu changes daily according to the seasonal produce available in the local markets. 
 
For first-class pampering, the spa has a menu of treatments to soothe and rejuvenate, along with an outdoor massage area, hammam, sensory shower and fitness center. There is also an outdoor heated pool, private tennis court and children’s club. 
 
Enveloped by the lavender fields of Provence and just 30km from Avignon, Le Phébus is a great base for exploring this beautiful region of France. Highlights include the 12th century Senanque Abbey, the Isle sur la Sorgue with Sunday afternoon antique market, the UNESCO-listed Fontaine de Vaucluse, the Pope’s Palace in Avignon and the Roman Amphitheater in Orange.
