Itinerary

Day 1-3

Malta

With your tastebuds at the ready you’ll be whisked away from the airport by private transfer to your hotel. As you drive through the narrow, cobbled street of Valletta, take in the vast Grand Harbour views as you turn the corner and arrive at the exquisite Iniala Harbour House Hotel, your boutique luxury hotel for the next two nights. Spread over four beautiful townhouses with several ancient vaults, sitting proud on the prestigious street of Saint Barbara Bastions, the hotel overlooks Malta's stunning Grand Harbour. You will be staying in the stylish Junior Suite with views of Valletta, offering the height of luxury.

Once you have had time to settle into the hotel, we recommend you head to the Bridge Bar for a sundowner in the very best of atmospheres, epitomising the definition of coolness. Here you can soak up the buzz of Valletta with its live jazz on a Friday night, as people gather on the steps with only cushions and a great glass (or bottle) of vino to take it all in. A super start to the evening before you head to the Iniala’s two Michelin starred restaurant ION The Harbour, for a mind-blowing tasting menu. Situated on the rooftop commandeering the evening harbor views, be mesmerized by the ambience, the first class and friendly service, the food to the wine pairing, everything has been seamlessly integrated to provide an elevated dining experience that will surprise and delight each of your senses.

Start the day with a delicious breakfast with the sun shining bright over the rooftop terrace and harbor, ready for your first full day taking in the very best that Valletta has to offer. Meet your expert guide at the hotel and enjoy a pleasant walk along the harbor edge to the Upper Barrakka Gardens, with stunning views over the Grand Harbour and the Three Cities beyond. Here the story is set for your day ahead, understanding the rich history and culture of Valletta with its many rulers and the prominent Knights of St John. Make your way down to the harbor’s edge where your private Dghajsa (boat) will be waiting for you ready to transfer you to the city of Vittoriosa in the Three Cities, the main harbor city where the Knights settled when arriving in Malta in 1530. This is where a very exclusive experience awaits you as you visit the Upper Fort St Angelo for a private visit to the home of Knight Resident Fra. John Critien. Your private tour will be led by Fra. John himself, full of charm and character, he will let you in on the fascinating insights, stories and history of the fort as he proudly shows you around the grounds of his home. Not only will you get to explore the grounds and private chapel, but you will be treated to exceptional views of the Grand Harbour with some additional surprises just for you. This is a very special guided tour.

Next you will return to Valletta by water taxi and enjoy a guided tour at the spellbinding St John’s Co-Cathedral which was built by the Order of St John and dedicated to Saint John the Baptist. Bursting with Baroque architecture, gold leaf décor and crammed full of fascinating history from top to bottom, the interior of the church is considered to be one of the finest examples of high Baroque architecture in Europe. Your guide will highlight the fascinating history, the nine niche chapels and the marble floor which is made up of an entire series of tombs, housing about 400 Knights and officers of the Order, before taking a viewing of the famous Caravaggio paintings: The Beheading of Saint John the Baptist and the Saint Jerome Writing. After lunch you will have the choice of enjoying a private boat experience through the Blue Grotto, a series of sea caverns that will highlight the beautiful waters in the area.

Following your fascinating day, your evening will not disappoint. Be ready to be wowed as you indulge in a divine evening of exquisite surrounds and delectable food as another Michelin starred delight awaits you this evening at Under Grain, here you will devour an exceptional tasting menu, located at the luxury boutique hotel, Rosselli. Classic dishes have been reinvented into contemporary works of art, introducing the combination of new ingredients with farm to table meats. Fresh fish brought in daily from the local fishermen is prepared delicately to exult the taste of the sea, while marrying it with interesting sides that complement the plate. This refined experience extends itself to the service. Under Grain's aim is to see you leave the restaurant with a sense of satisfaction, and the realisation that a classic dinner is still possible in today’s world of cuisine.

Day 3-4

Malta

Get set to eat your way through a day of Maltese cuisine and rural delicacies as we take you off the beaten path to understand the culture and food of rural Malta, meeting a host of charming characters along the way.

Your private transfer will take you into the countryside to a bijou olive farm that has been lovingly created and attributed to the Maltese rural tourism project, enhancing local traditions for the better of the countryside. Starting with a fun hands-on experience as you learn how to make the famous Maltese snack, pastizzi. Hot, flaky savory pastries traditionally filled with either ricotta or curried mushy peas. With the king of pastizzi himself, master baker Gilinu who has been making these delicious snacks for a lifetime, will take you through this century’s old creation. After a welcome drink with Gilinu and his wife Nancy, they will demonstrate how to make these tasty morsels before having a go yourself, there is a lot of fun to be had as you learn this special art! With many tastings to be had whilst you are there.

Whilst your creations are being baked it will give you a chance you explore this little oasis as you wander through the olive grove and grounds, where you may also get the chance to chat with the owner and farmer, Charlie as you understand his vision for the farm and enhancing the local produce of the area.  With your pastizzi freshly baked you can enjoy a delicious rustic farmer’s lunch in a quiet spot on the farm, sampling an array of produce direct from the farmers and straight to your plate, paired with local wine and coffee. After lunch you will be taken to one of the most respected vineyards on the island, Ta’ Betta, for a private tasting of their fabulous fine wines. Ta’ Betta Wine Estate comprises of 4 hectares of terraced land situated 200 meters above sea-level, with the medieval town of Mdina as a backdrop. With 15,000 vines planted on site and around 200 olive trees and other fruit trees, all nestled amongst indigenous Maltese flora, this is a wonderful way to while away the afternoon.

You now have an exceptional and unique evening experience ahead of you in the medieval old city of Mdina, where you will spending your final night in Malta. You will feel the power as you enter the old capital city and fall in love with it in as much as the many noble families who continue to live here. You will find a range of architecture that includes Baroque, Norman and Arabic features. If you're a Game of Thrones fan, you will recognize the main gates immediately. As night falls you will be stunned by the stillness that engulfs this ‘silent city’ and get swept away with the history and families that have resided here for generations. Noble families have occupied Mdina well before the Knights of St. John arrived in Malta.

Having walked the silent streets, you will arrive at the beautiful courtyard of the Xara Palace Relais & Chateaux hotel, ready for you next Michelin dining experience. Nestled in the ancient city walls of Mdina with far reaching views over Malta, you will firstly be wowed by this majestic setting to then arrive at the rooftop restaurant oozing a decadent style and surrounds. The tasting menu at De Mondion is absolutely stunning with impeccable service to match and is consistently rated amongst the top restaurants in Malta. Set atop Mdina's centuries-old bastions you will get to enjoy breath-taking views as you savour every aspect of this fine dining experience. Here your experience continues as you spend your final night in one of the stunning suites, with vast panoramic views overlooking the Maltese countryside, this is very much a special sight to wake up to.
