Description

Lake House is a tranquil retreat set in six acres of country gardens right on the edge of Lake Daylesford. This small luxury hotel is renowned for its restaurant and cellar, which draw gourmet fans from all over the world.

Located just 80 minutes from Melbourne, Lake House sits on the quiet shores of Lake Daylesford in the heart of Victoria's 'spa country'.

The suites feature superior king beds, plush sofas, textured armchairs and soft furnishings in chartreuse, citron, champagne gold and mustard yellows. On the walls are original paintings and prints from Allan Wolf-Tasker’s studio. A stone topped bar is stocked with regionally sourced sips and nibbles, Salus Spa’s own sparkling mineral water, Nespresso Coffee machines and a selection of sweet indulgences from the Lake House kitchen. En-suites have spacious vanities, dual showers, double spa baths and heated bathroom floors for those cool autumn and winter days.

Exploring the property is in itself an adventure. Enjoy a game of tennis followed by tea and refreshments in the tennis pavilion, a glass of wine by the open fire or a game of billiards in the Lounge. Given the opportunity to explore the gardens, you will stumble upon the Kitchen Garden, bursting with edible shoots and flowers, a myriad of sculptures and artwork from many of the region’s top artists, extensive outdoor terraces overlooking the lake shore and established country gardens with everything from koala loved stringy barks to lilac, Daphne, quince, plum and apple trees.

In the kitchens, a talented young team under the guidance of Owner and Executive Chef Alla Wolf- Tasker works from the ground up producing cutting edge, modern Australian cuisine with an emphasis on seasonal and regional ingredients. A la carte and tasting menus change with the seasons and the availability of the region's best produce, reinforcing the "paddock to plate" philosophy here at Lake House. The cellar is standout with over 800 references and more than 10,000 bottles - it is regarded as one of Australia's most interesting and edgy wine lists.

The Salus Spa designed with blond wood and splashes of Tiffany blue, is surrounded by waterfall fed streams and completes the picture of this indulgent and blissful retreat.

The village itself is surrounded by several thousand hectares of state forest. Walking tracks through the Wombat State Forest alongside rivers, lakes and waterfalls yield frequent encounters with an abundance of Australian animals including wallabies, wombats and koalas.

For those wanting a little more activity in the fresh air there is horse riding, guided walks, golf, fishing, cricket and more.

Lake House comprises thirty-three rooms, suites and luxury retreat accommodation with a choice of courtyard or waterfront views. Rooms are individually furnished with original artworks by co-owner and renowned artist Allan Wolf-Tasker and other artists from the culturally rich region.

Childcare

Lake House stays tend to emphasize fine dining matched with beautiful wines, and are therefore not appropriate for children under 18 years. However, they do welcome families as guests and can provide activities and experiences in the region conducive to family time away together.

Facilities

The restaurant here at Lake House is a stand-out highlight of any stay. Led by Executive Chef and Owner, Alla Wolf-Tasker, the restaurant holds many accolades. As part of their policy of developing a direct relationship with growers and producers - much of the produce used at Lake House is sourced locally. Menus are generally altered twice each season, according to best available produce.

Activities

Go fishing for speckled trout and have it cooked for you by a third generation local farmer at one of the oldest sheep stations in the district. Take a stroll through the pristine nearby Wombat State Forest or a more challenging guided walk along the Dry Diggings Track and great Dividing Trail. Visit the studios of local artists for a private showing. Enjoy a cooking class or forage with the resident chefs. Explore the quirky shops and markets of local villages or simply relax and enjoy treatments in the Salus spa, a lazy afternoon by the lake and a great book and some of Australia's best food and wine.

Lake House can be found the charming bohemian town of Daylesford in the heart of Victoria's Spa country. The town was founded as a mining community during the gold rush and Lake House is built upon an old Chinese market garden. Since then the town has morphed into an eclectic mix of artists studios, cafes, boutique day spa and holistic healing centres. The area is renowned for its glorious walking trails, galleries, markets, artisanal producers, bookshops and superb wineries.

Lake House was founded in the 1980s and is still run by the same family who maintain their passion for providing elegance with a sense of place. Since then it has grown from a destination country restaurant to a spa hotel - a real melting pot for foodies. Set on six acres of manicured grounds, scattered with fruits trees and edible gardens, the rooms are delightful and airy and set amongst waterfront gardens.

Through decades of hard work Lake House now boasts one of Australia's top restaurants with Two Chefs hats and has a New York Wine Spectator award winning wine list of some 10,000 bottles. I found the best way to soak up the atmosphere is pull up a stool at the bar with a cocktail or relax to relax on the terrace overlooking the lake while hand feeding the resident kookaburra.

In the pretty gardens two tree house cabins overlook Lake Daylesford with hot mineral water tubs perfect for a pre pamper soak. Throughout the property you will see the work of many of the region's artists including Lake Houses own resident artist and co-owner Allan Wolf-Tasker. Each room also comes complete with one of Allans stunning works and it is worth ambling down to his studio opposite the Salus Spa where he will chat to you about his works and the transformation of Lake House and Daylesford over the years.
