The Casa de Sierra Nevada is one of Mexico's most acclaimed hotels and cookery schools, and provides a gorgeous historic setting for learning all about the amazing diversity of Mexican cuisine. It is also a timeless place from which to explore the cultural delights of San Miguel de Allende.
The accommodation comprises 37 deluxe rooms and suites arranged amongst four mansions dating back to the 16th century. Each room has a distinctive charm with beamed ceilings, warm Mexican tones and regional furnishings including contemporary art, antiques, exquisite fabrics and beautiful Talavera-tiled bathrooms. Suites have a fireplace, oversized bath with separate shower stall and a private terrace with plunge pool.
Cookery courses cover the different forms of Mexican cuisine, including traditional regional specialities and some of the more modern favourites, and are led by highly experienced in-house chefs with a real passion for the diverse local flavours and methods of cooking.
The hotel has two gourmet restaurants and a lovely patio bar overlooking the cobblestone streets, which provides a relaxed setting for pre-dinner cocktails. For pampering, the Laja Spa provides an array of invigorating beauty therapies including massage, facials, reflexology and body treatments.

When to travel
The Colonial Highlands are blessed with a spring-like climate year-round. The average day is brisk in the morning, warm and sunny in the afternoon and cool at night. Winter days are warm (in the 20s C), although you may require a sweater after the sun goes down. April and May tend to be hot and dry. Expect brief afternoon showers 3 or 4 times a week from June to mid-October. Rains are typically heaviest in July and August.

Casa de Sierra Nevada is situated on Hospicio, in the town of San Miguel de Allende in Mexico’s Central Highlands, it is easily reached from Mexico City which is 177 miles away.
How to get there
11 hour flight to Mexico City International Airport, followed by a 3 hour transfer to Casa de Sierra Nevada. Alternatively, León Airport is 1.5 hours away from the hotel or the Queretaro Airport, just 1 hour from the hotel.
